Tammy’s Corn Casserole

One of those recipes you can “make your own”.
You can adjust sugar, jalapeno juice and diced jalapeno to your personal preference. The original recipe did not call for sugar at all…I like mine sweeter. Son-in-law likes it spicier so they add more jalapeno. Just mix together in a glass casserole dish and pop into the microwave at the last minute prior to serving. It is also easy to adjust the amounts for a smaller family.

Ingredients
- 3 cans corn drained
- 8 ounces cream cheese
- 3 heaping tablespoons sugar
- 1/4 cup jalapeno juice
- 1 tablespoon jalapenos, very finely diced (You can use EITHER canned jalapenos or fresh, deseeded jalapenos.)
- salt & pepper to taste (optional)
Directions

Combine all ingredients in a pan on stove top.

Heat on medium until cream cheese is melted.

Place in 350 degrees oven and heat until it bubbles.

TIP: Or…just mix in your casserole dish, pop in microwave…heat & eat!
