- 1/2 cup pearl barley cooked (cook in 1 1/2 cup water 40-45 minutes)
- 1 cup long grained rice, cooked
- 1 cup black or pinto beans
- 1 cup red kidney beans
- 1 cup corn niblets
- 1/2 cup green onion, chopped
- 1 red pepper, diced
- 1 mango, chopped
- 1/4 cup cilantro
- Dressing:
- 1/4 cup red wine vinegar or white wine vinegar
- 1/2 cup olive oil
- 1 garlic clove, minced
- 1 tsp chili powder
- 1/2 tsp salt
- 1/4 tsp pepper
- optional: cayenne or red pepper flakes
