Turkey soup

Serves 6 people

Ingredients

  • turkey carcass
  • 2 1/2 qts water
  • 1 tblsp salt
  • 1/8 tsp pepper
  • 1 cup converted rice
  • 1 sm pkg baby carrots, sliced
  • 1 sm pkg frozen lima beans
  • 1 sm pkg frozen corn
  • 1/8 tsp thyme leaves
  • 1 bay leaf
  • 16 oz can stewed tomatos cut up

Directions

  1. Put turkey carcass in lg pot. Add water, salt and pepper. Bring to a boil. Reduce to low-cover and simmer 1 1/2 hours. Remove meat and bones from broth. Cool! Cut meat up. Toast rice over med heat (no oil) until golden brown. Skim fat off broth. Add rice, carrots, lima beans, corn, thyme, bay leaf to broth. Bring to boil. Reduce heat-cover and simmer for 15 minutes—add turkey and tomatos. simmer until heated. Usually I put it in the crockpot all day. It gives it more taste.
