Cream Wafers

A light and delicate cookie – makes 5 dz double cookies. 1977

Ingredients
- Cookies:
- 1 c butter (softened)
- 1/2 c whipping cream
- 2 c sifted flour
- Filling:
- 1/4 c softened butter
- 3/4 c sifted pwd sugar
- 1 egg yolk
- 1 tsp vanilla
- food coloring (optional)
Directions

Mix the butter, whipping cream and flour together. Chill dough for 1 hr.

Roll dough 1/8" thick. Cut into 1 – 1 1/2" rounds. Transfer to waxed paper heavily sprinkling with sugar. Turn to coat w-sugar. Place on ungreased cookie sheet. Prick in abt 4 places w-fork. Bake 7-9 min 350F or until slightly puffy but not brown. Put 2 cooled cookies together w-filling.

Blend filling ingred together w/ or w/o food coloring.
