Ingredients
- 8 potatoes, cooked, peeled, sliced
- 2 stalks celery, chopped
- 3 hard boiled eggs, chopped
- 6 slices of bacon, cooked & crumbled
- 1 Tbsp parsley
- Sauce:
- 2 eggs well beaten
- 1 cup sugar
- 1/2 cup white vinegar
- 1/2 cup cold water
- 1/4 tsp dried mustard
- 1/2 tsp salt
- 1/4 tsp pepper
Directions

Boil potatoes for 20-25 mins, cool, peel, and slice. Beat eggs, add sugar, spices and vinegar and water. Pour egg mixture into hot bacon grease and cook. Stirring until thickened – about 10 mins. Pour over potatoes mixture, add bacon. (Start with adding only 1/2 sauce and continue adding until you are good with the mix.) Serve hot or cold.
