ham and egg enchiladas

good for breakfast or dinner
I either use mexican or monterey/cheddar

Ingredients
- 1 tblsp cornmeal
- 2 cups cooked diced ham
- 4 oz (1 c) shredded cheese (any kind)
- 1/2 c sliced green onions
- 4 oz can chopped green chiles, drained
- 8--8 inch flour tortillas
- 6 eggs
- 1 cup half and half (1/2 pint)
- 1 tblsp flour
- 3 drops hot pepper sauce (optional)
- 4 oz shredded cheese (any kind)

Heat oven to 350

Grease 13 by 9 in baking dish:sprinkle bottom with cornmeal

In med bowl, combine ham, 1 c cheese, onions,and green chiles. Spoon about 1/3 c mixture in center of each tortilla. Roll tightly and place in prepared dish.

In med bowl, combine eggs, half and half,

flour and pepper sauce:beat well. Pour evenly over filled tortillas:cover. Bake at 350 for 35 to 40 minutes or until eggs are set. Remove from oven: sprinkle with 1 c cheese. Cover let stand 5 minutes.
