ham and egg enchiladas

good for breakfast or dinner
I either use mexican or monterey/cheddar

Cook time: 35 minutes
Serves 8 people

Ingredients

  • 1 tblsp cornmeal
  • 2 cups cooked diced ham
  • 4 oz (1 c) shredded cheese (any kind)
  • 1/2 c sliced green onions
  • 4 oz can chopped green chiles, drained
  • 8--8 inch flour tortillas
  • 6 eggs
  • 1 cup half and half (1/2 pint)
  • 1 tblsp flour
  • 3 drops hot pepper sauce (optional)
  • 4 oz shredded cheese (any kind)

Directions

  1. Heat oven to 350

  2. Grease 13 by 9 in baking dish:sprinkle bottom with cornmeal

  3. In med bowl, combine ham, 1 c cheese, onions,and green chiles. Spoon about 1/3 c mixture in center of each tortilla. Roll tightly and place in prepared dish.

  4. In med bowl, combine eggs, half and half,

  5. flour and pepper sauce:beat well. Pour evenly over filled tortillas:cover. Bake at 350 for 35 to 40 minutes or until eggs are set. Remove from oven: sprinkle with 1 c cheese. Cover let stand 5 minutes.
