Healing Cabbage Soup

Serves 10 people

Ingredients
- 3 T olive oil
- 1/2 onion, chopped
- 2 cloves garlic, chopped
- 2 quarts water (8 cups, may use 2 cups broth)
- 4 t bullion (or to taste, use less if using broth)
- 1 t salt
- 1/2 t pepper
- 1/2 head cabbage (coursely chopped)
- healthy dash of cayenne pepper
- healthy dash of red curry powder
- 1 can (14-15 oz) tomatoes (try roasted garlic)
- 1 zucchini, diced
- 1 can of corn (small)
- 1 cup of sliced mushrooms (any kind)
Directions

In a large stock pot over medium heat, warm olive oil.

Stir in onion and garlic.

Cook 5 minutes.

Stir in everything but tomatoes.

Simmer 10 minutes.

Add tomatoes.

Simmer 15-30 minutes (or until veggies are cooked to taste)
