Chocolate Orange Layer Cake

Ingredients
- Cake:
- 1 c boiling water
- 2/3 c unsweetened coco
- 2 oz bittersweet chocolate (finely chopped)
- cooking spray
- 1 3/4 c sugar
- 6 T butter (soft)
- 1 t vanilla extract
- 3 large egg whites
- 1/2 c sour cream
- 1 2/3 c cake flour
- 1 t baking powder
- 3/4 t baking soda
- 1/2 t salt
- Filling:
- 1/3 c orange juice
- 3 T sugar
- 1 1/2 t cornstarch
- 2 1/2 t unsweetened cocoa
- 3/4 t flour
- dash of salt
- 1/4 oz bittersweet chocolate (finely chopped)
- 3/4 c whipped cream
- Glaze:
- 2 T evaporated milk
- 1 T butter
- 4 oz bittersweet chocolate (finely chopped)
Directions

Cake:
-
eheat oven to 350.

Combine 1 c boiling water & 2/3 c cocoa in a bowl.

Stir until smooth.

Add 2 oz bittersweet chocolate.

Stir until smooth.

Cool to room temperature.

Coat 2 (8 inch) round metal cake pans with w/cooking spray.

Line bottoms of pans w/wax paper.

Coat wax paper w/cooking spray.

dust each pan w/ 1 t flour.

Place 1 3/4 c sugar, 6 T of butter & 1 t vanilla in a large bowl.

Beat with mixer @ medium speed for 1 minute.

Add egg whites, 1 at a time, beating well after each addition.

Add sour cream, beat @ medium speed 2 minutes.

Lightly spoon 1 2/3 c into dry measuring c (level with knife).

combine flour, baking powder, baking soda & 1/2 t salt in a bowl.

Stir well.

Add flour mix & cocoa mix beginning and ending with flour mix; alternate mixing the two in.

divide batter evenly between prepared pans.

Bake for 30 minutes.

cool 10 mintues on wire racks.

Invert cake layers to cool.

Filling:
-
Combine juice and next 6 ingrediants (through 1/4 oz chocolate) in small saucepan over low heat; bring mix to a boil.

Stir frequently.

Cook 1 minute, stirring constantly.

Pour into bowl, cover and chill.

Uncover & add whipped topping.

Glaze:

Combine milk, 1 T butter & 4 oz bittersweet chocolate in medium bowl.

Melt in microwave for 1 minute or on stovetop.

Stir every 15 seconds.

Construction:
-
Place 1 cake layer on a plate.
-
Spread filling over top, leaving a 1/4 in border.

Top w/remaining cake layer.
-
Sppon warm glaze over top of cake.

Allow it to drip over the edges of the cake.
