Chocolate Orange Layer Cake

Ingredients

  • Cake:
  • 1 c boiling water
  • 2/3 c unsweetened coco
  • 2 oz bittersweet chocolate (finely chopped)
  • cooking spray
  • 1 3/4 c sugar
  • 6 T butter (soft)
  • 1 t vanilla extract
  • 3 large egg whites
  • 1/2 c sour cream
  • 1 2/3 c cake flour
  • 1 t baking powder
  • 3/4 t baking soda
  • 1/2 t salt
  • Filling:
  • 1/3 c orange juice
  • 3 T sugar
  • 1 1/2 t cornstarch
  • 2 1/2 t unsweetened cocoa
  • 3/4 t flour
  • dash of salt
  • 1/4 oz bittersweet chocolate (finely chopped)
  • 3/4 c whipped cream
  • Glaze:
  • 2 T evaporated milk
  • 1 T butter
  • 4 oz bittersweet chocolate (finely chopped)

Directions

  1. Cake:

  2. eheat oven to 350.

  3. Combine 1 c boiling water & 2/3 c cocoa in a bowl.

  4. Stir until smooth.

  5. Add 2 oz bittersweet chocolate.

  6. Stir until smooth.

  7. Cool to room temperature.

  8. Coat 2 (8 inch) round metal cake pans with w/cooking spray.

  9. Line bottoms of pans w/wax paper.

  10. Coat wax paper w/cooking spray.

  11. dust each pan w/ 1 t flour.

  12. Place 1 3/4 c sugar, 6 T of butter & 1 t vanilla in a large bowl.

  13. Beat with mixer @ medium speed for 1 minute.

  14. Add egg whites, 1 at a time, beating well after each addition.

  15. Add sour cream, beat @ medium speed 2 minutes.

  16. Lightly spoon 1 2/3 c into dry measuring c (level with knife).

  17. combine flour, baking powder, baking soda & 1/2 t salt in a bowl.

  18. Stir well.

  19. Add flour mix & cocoa mix beginning and ending with flour mix; alternate mixing the two in.

  20. divide batter evenly between prepared pans.

  21. Bake for 30 minutes.

  22. cool 10 mintues on wire racks.

  23. Invert cake layers to cool.

  24. Filling:

  25. Combine juice and next 6 ingrediants (through 1/4 oz chocolate) in small saucepan over low heat; bring mix to a boil.

  26. Stir frequently.

  27. Cook 1 minute, stirring constantly.

  28. Pour into bowl, cover and chill.

  29. Uncover & add whipped topping.

  30. Glaze:

  31. Combine milk, 1 T butter & 4 oz bittersweet chocolate in medium bowl.

  32. Melt in microwave for 1 minute or on stovetop.

  33. Stir every 15 seconds.

  34. Construction:

  35. Place 1 cake layer on a plate.

  36. Spread filling over top, leaving a 1/4 in border.

  37. Top w/remaining cake layer.

  38. Sppon warm glaze over top of cake.

  39. Allow it to drip over the edges of the cake.
