Mushroom Tortelloni

Prep time: 15 minutes
Cook time: 3 minutes
Serves 4 people
Ingredients
- Premade dough from store (think wantons)
- 2 T olive oil
- 1 T butter
- 1/2 c cremini mushrooms (sliced)
- 1/2 c porcini mushrooms (sliced)
- 1 c other mushrooms (sliced)
- 2 cloves of garlic (minced)
- 1 t salt
- 1 c ricotta cheese
- 1/2 c fresh grated parmigiano-reggiano cheese
- 1 egg
Directions

Pat dough into a 3×8 inch rectangle 1-inch thick.

Divide dough into 8 equal portions.

1 portion at a time (keep remaining dough covered) & roll w/a rolling pin.

Take the top of a juice glass & create round circles in dough.

Place filling in middle of round circle.

Fold in half, seal w/egg wash.

Fold in half again.

Place pasta (filled) in 6 quarts of boiling water.

Boil 3 minutes
