Mushroom Tortelloni

Cook time: 3 minutes
Serves 4 people

Ingredients

  • Premade dough from store (think wantons)
  • 2 T olive oil
  • 1 T butter
  • 1/2 c cremini mushrooms (sliced)
  • 1/2 c porcini mushrooms (sliced)
  • 1 c other mushrooms (sliced)
  • 2 cloves of garlic (minced)
  • 1 t salt
  • 1 c ricotta cheese
  • 1/2 c fresh grated parmigiano-reggiano cheese
  • 1 egg

Directions

  1. Pat dough into a 3×8 inch rectangle 1-inch thick.

  2. Divide dough into 8 equal portions.

  3. 1 portion at a time (keep remaining dough covered) & roll w/a rolling pin.

  4. Take the top of a juice glass & create round circles in dough.

  5. Place filling in middle of round circle.

  6. Fold in half, seal w/egg wash.

  7. Fold in half again.

  8. Place pasta (filled) in 6 quarts of boiling water.

  9. Boil 3 minutes
