Greek Orzo Salad

Ingredients
- 5 c cooked orzo
- 1 large cucumber (peeled, seeded, diced)
- 1 medium red onion (diced)
- 20 kalamata olives (quartered)
- 1 (14oz) can artichoke hearts (cut into 1/8ths)
- 1/4 c fresh chopped parsley
- 1/3 c extra virgin olive oil
- 1 large lemon, halved
- 1/2 T salt
- 1/2 T black pepper
- 4 oz feta
Directions

In large mixing bowl add orzo, cukes, tomatoes, onion, olives, artichokes & parsley.

Stir.

Pour olive oil into mixture.

Juice entire lemon into bowl.

Add feta.

Stir.

Chill.
