Green Bean, Feta, Black Olive Salad

Ingredients
- 1 1/4 c uncooked bulgur
- 1 1/4 c boiling water
- 2 c cooked green beans in 1 inch pices
- 3/4 c (3 oz) crumbled feta cheese
- 1/4 c chopped fresh parsely
- 1/4 c fresh chopped mint
- 1/4 c thinly sliced red onion
- 1/2 t grated lemon rind
- 1/4 c fresh lemon juice
- 2 1/2 T extra virgin olive oil
- 1/2 t salt
- 1/4 t black pepper
- 4 kalamata olives (finely chopped)
Directions

Combine bulgur & boiling water in large bowl.

Let stand 30 minutes or until water is absorbed.

Add remaining ingrediants to bulgur, toss gently.
