Green Bean, Feta, Black Olive Salad

Ingredients

  • 1 1/4 c uncooked bulgur
  • 1 1/4 c boiling water
  • 2 c cooked green beans in 1 inch pices
  • 3/4 c (3 oz) crumbled feta cheese
  • 1/4 c chopped fresh parsely
  • 1/4 c fresh chopped mint
  • 1/4 c thinly sliced red onion
  • 1/2 t grated lemon rind
  • 1/4 c fresh lemon juice
  • 2 1/2 T extra virgin olive oil
  • 1/2 t salt
  • 1/4 t black pepper
  • 4 kalamata olives (finely chopped)

Directions

  1. Combine bulgur & boiling water in large bowl.

  2. Let stand 30 minutes or until water is absorbed.

  3. Add remaining ingrediants to bulgur, toss gently.
