chickpea vegan “tuna” salad

Ingredients
- 1 cup chickpeas, cooked and mashed
- 1/2 carrot, grated
- 1/2 celery, sliced
- 1/2 onion, minced
- 2 Tbsp vegan mayonnaise
- 2 tsp mustard
- 1/2 lemon, juice
- salt
- pepper
- nori seaweed (optional)

just mix everything and serve on bread. the nori gives it a ‘fishy’ taste, i usually just do without (i never liked fish anyway).
