Ingredients
- 6 large sweet potatoes , peeled and cut into 1-inch chunks
- 1 cup unsalted butter , melted
- 2/3 cup firmly packed light brown sugar
- 2 tablespoons fresh lemon juice
- 2 teaspoons Chinese five spice powder
- 1/2 teaspoon ground ginger
Directions

Coat a 13 × 9 inch baking dish with nonstick cooking spray.

Add potatoes to the prepared dish.

In a bowl, stir together the remaining ingredients until well blended; pour the butter mixture over the potatoes and turn to coat evenly.

*At this point, you can cover and refrigerate for up to 2 days, bring to room temperature before continuing.

Preheat oven to 375°; bake until tender when pierced with a knife, 45-55 minutes.

Remove from the oven and serve hot or at room temperature.
