Slow-Cooker Vegetable Soup

Ingredients

  • 1 lb boneless round steak , cut into 1/2 inch cubes
  • 1 (14 1/2 ounce) can diced tomatoes , undrained
  • 3 cups water
  • 2 medium potatoes , peeled and cubed
  • 2 medium onions , diced
  • 3 stalks celery , sliced
  • 2 carrots , sliced
  • 3 beef bouillon cubes
  • 1/2 teaspoon dried basil
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon salt (optional)
  • 1/4 teaspoon pepper
  • 1 1/2 cups frozen mixed vegetables (I used 2 15 oz.cans veg-all)

Directions

  1. In a slow cooker, combine the first 12 ingredients.

  2. Cover and cook on high for 6 hours.

  3. Add frozen vegetables or cans of veg-all.

  4. Cover and cook on high for 2 hours longer or until meat and vegetables are tender.
