Microwave Peanut Brittle

If your microwave has a really high cooking temp, you might have to adjust your time.
I have trouble burning this every time…my husband and daughter make it perfect…go figure!!

Ingredients
- 1 cup sugar
- 1/2 cup white corn syrup
- 1 cup roasted, salted peanuts
- 1 teaspoon butter
- 1 teaspoon vanilla
- 1 teaspoon baking soda

TIP: It is helpful to have all your ingredients pre-measured so you can add them quickly to your syrup.

In 1 1/2 quart glass casserole, stir together sugar and syrup.

Microwave at High for 4 minutes.

Stir in peanuts.

Microwave at High for 3 to 5 minutes until light brown.

Add butter and vanilla to syrup, blending well.

Microwave on high 1 to 2 minutes more. Peanuts will be lightly browned and syrup very hot.

Add baking soda and gently stir until light and foamy.

Pour mixture onto lightly greased cookie sheet. Let cool 1/2 to 1 hour.

When cool, break into small pieces and store in an air tight container.
