Salmon Burgers

Ingredients
- Tartar Sauce:
- 1/2 cup mayonnaise
- 3 tablespoons fresh lemon juice , divided
- 2 tablespoons capers , drained
- 1 tablespoon sweet pickle relish
- salt
- black pepper
- Salmon Burgers:
- 1 cup panko , bread crumbs
- 1/2 cup chopped celery
- 1/4 cup chopped onion
- 1/4 cup chopped chives
- 1 egg white
- 1 tablespoon sriracha sauce
- 1 teaspoon kosher salt
- 1/2 teaspoon black pepper
- 1 lb skinless salmon , diced
- 4 hamburger buns , toasted
- shredded iceburg lettuce
- tomato , slices

Preheat grill to medium-high; line a baking sheet with parchment paper.

Combine mayonnaise, 2 tablespoons lemon juice, capers, and relish in a small bowl; season with salt and pepper; cover and chill.

Pulse panko, celery, onion, chives, egg white, Sriracha sauce, 1 tablespoon lemon juice, salt, and pepper in a food processor until minced; add salmon; pulse briefly.

Form salmon mixture into 4 patties; transfer to prepared baking sheet.

Coat both sides of burgers with nonstick spray; brush grill grate with oil.

Grill burgers, covered, until cooked through, about 4 minutes per side.

Place lettuce and tomato on buns; top with burgers and tartar sauce.
