Ingredients
- Shortcrust pastry
- 6 tbsp currants
- 2 tbsp sugar
- 3 tbsp apricot jam
- 90g butter
- 3oz. sugar
- 1 egg
- 9 large tbsp coconut
Directions

Cut circles of pastry to fit in shallow patty dishes.

Combine currants, sugar and jam. Place some filling into each of the patty dishes.

Mix up butter, sugar, egg and coconut. Place some topping on each of the tarts.

Bake at 180oC for 20 minutes.
