Carrot Cake

Ingredients

  • 4 eggs
  • 1 cup brown sugar
  • 1 1/2 cup vegetable oil
  • 2 cups flour
  • 2 tsp. baking powder
  • 1/4 tsp. salt
  • 1 1/2 tsp. cinnamon
  • 1/2 tsp nutmeg
  • 1 cup raisins
  • 3 cups carrots, grated
  • 1 tsp vanilla
  • 1 cup walnuts or pecans, chopped
  • Frosting:
  • 8 oz cream cheese at room temp
  • 1 stick of butter
  • 2 tbsp. vanilla
  • 1 pound confectionary sugar
  • finely chopped nuts

Directions

  1. at eggs with brown sugar. Sift together dry ingredients. Add oil to sugar mixture. Mix together sugar mixtures and dry ingredients. Fold inm carrots, raisins, vanilla, and nuts. Bake in greased tube pan at 375.

  2. Cool cake in pan 10 minutes. Turn out onto rack to cool completely.

  3. Frosting: Beat cream cheese and butter together. Add vanilla and confectionary sugar. Beat until light and fluffy. Spread generously over top and sides and sprinkle with nuts (1/3-1/2 cup)
