Vegetable Pot Pie

Ingredients

  • vegetable broth, enough to cover vegetables
  • 1 cup carrots, chopped
  • 2 cups potatoes, chopped
  • 1 cup peas
  • 1 small onion, chopped
  • 2 stalks celery, sliced
  • 1 bay leaf
  • 1/2 tsp sage
  • 1 tsp thyme
  • 4 cloves garlic, minced
  • 2 tsp poultry seasoning
  • 1 tsp onion salt
  • 1 tbsp tamari
  • 6 tbsp cornstarch/4 tbsp water
  • salt & pepper to taste

Directions

  1. prepare veggies

  2. saute onion in vegetable broth

  3. add potatoes, carrots and peas

  4. add enough vegetable broth to cover

  5. add remaining ingredients except cornstarch and water

  6. boil, then turn to low heat until vegetables are cooked, then add cornstarch/water mixture to thicken. put biscuits on top and bake in a 400 degree oven for 15 – 20 minutes.
