Snowballs

we also call them Russian teacakes. Balls aren’t the only shape: mini crescent, log or egg shaped works well.

Ingredients
- 2 C all-purpose flour
- 1/4 C sugar or 1/2 C confectioner's sugar
- 1/4 tsp salt
- 1 C chopped pecans (opt. raw almonds)
- 1 C soft butter (not melted and no substitutions!)
- 2 tsp vanilla
- confectioner's sugar for rolling the cookies

Preheat oven to 350 degrees.

Sift together the flour, sugar and salt. Set aside.

In a medium bowl, cream butter and vanilla until smooth.

Stir dry ingredients into the butter mixture until just blended. Mix in the chopped nuts.

Roll dough into 1 inch balls, and place them 2 inches apart on an ungreased cookie sheet. (can line with parchment paper).

Bake for approximately 15 minutes in the preheated oven. When cooled slightly, roll in remaining confectioners’ sugar. I also like to roll mine in the sugar a second time.
