Zucchini Bread

Ingredients

  • 3 eggs
  • 1 cup vegetable oil
  • 2 cups sugar
  • 2 cups peeled and grated zucchini
  • 1 teaspoon vanilla
  • 3 cups flour
  • 1 teaspoon salt
  • 1 teaspoon baking soda
  • 2 teaspoons ground cinnamon
  • 1/4 teaspoon baking powder

Directions

  1. Preheat oven to 325 degrees.

  2. Mix dry ingredients until well combined.

  3. Beat eggs and sugar seperately until light an foamy.

  4. Add oil, zucchini, vanilla and mix lightly.

  5. Add dry ingredients and stir only until well blended.

  6. Brush pans with oil.

  7. Bake for one hour.
