Ingredients
- 3 Chicken Breasts, boneless, skinless
- 3 TB soy sauce, divided
- 3 TB lemon juice, divided
- 3 cloves garlic, minced
- 1 TB sesame oil
- 1 tsp curry powder
- 1/2 c natural peanut butter
- 1 c canned coconut milk
- 1/4 c brown sugar
- 1/4 tsp cayenne pepper (to taste)
Directions

Cut chicken breasts into flat strips about 1×2 inches (about 30 pieces total)

place chicken in large ziplock bag with 2 tablespoons soy sauce, 2 tablespoons lemon juice, garlic and oil.

marinate at room temp for 30 minutes, turning frequently

combine all remaining ingredients into small bowl to make sauce-warm when ready

thread marinated chicken onto skewers (barely touching)

broil on high in oven for about 5 minutes, or grill

turn and cook another 3-5 minutes
