Spinach Salad

Serves a ton. Might want to cut it in half.
Still the best spinach salad I have ever had. Dressing just makes it!

Ingredients
- 2 (10 oz) packages of fresh spinach
- 1 lb bacon
- 2/3 lb. mushrooms sliced
- Dressing: 4 Tbsp lemon juice
- 12 tbsp. olive oil
- 2 tsp. salt
- 1/4 tsp. pepper
- 2 cloves garlic, minced
- 1/4 tsp. dry mustard
- 1/2 tsp. sugar
- 2 egg yolks
Directions

Trim and wash spinach. Dry between sheets of paper towels. Tear into bite size pieces in bowl. Render bacon until crispy; drain; crumble over spinach. Wash and dry mushrooms. Slice. Add to bowl and chill.

In a dressing bottle add salt to lemon juice and shake until dissolved. Add rest of ingredients and shake. Do not chill. Make just before serving and pour over spinach mixture.
