Asian Slaw

Serves 6 people

Ingredients

  • 1/4 cup extra-virgin olive oil
  • 3 tablespoons minced ginger (or 1 tsp powdered)
  • 1 tablespoon minced garlic
  • 2 tablespoons brown sugar
  • 5 tablespoons soy sauce
  • Juice of 1 lime
  • 1 teaspoon sesame oil
  • 1/4 cup rice wine vinegar
  • 1 bag coleslaw
  • 1 cup julienned carrots
  • 1/2 cup thinly sliced red bell pepper
  • 1 minced serrano pepper

Directions

  1. For Dressing:

  2. Heat vinegar and soy sauce for 30 seconds in microwave

  3. Dissolve brown sugar into mixture

  4. Add the rest of ingredients and mix well or shake

  5. For Slaw:

  6. Put all ingredients in a gallon Ziploc bag and shake to mix

  7. Dress as needed

  8. Add sesame seeds and crushed peanuts for crunch.

  9. Other add ins:

  10. Cooked ramen noodles, fried won ton skins, protein (chic, shrimp, pork, beef) to serve as meal.

  11. For a Thai Slaw, add 1 Tbsp creamy peanut butter and 1 Tbsp chopped mint

  12. Also can be used as spring roll filling.
