Tapioca Pudding

Ingredients
- 3 cups milk
- 1/3 cup small pearl tapioca
- 2 extra-large egg yolks, lightly beaten
- 1/4 teaspoon salt
- 1/3 cup sugar
- 1 tsp vanilla extract, if not using vanilla bean
- 1 vanilla bean, split along the length w/ scraped out innards
Directions

-soak 1/3 cup tapioca pearls in 3/4 cup milk in thick bottomed medium sized pot for 30 minutes

-whisk eggs, salt, sugar, vanilla bean and innards (if using), rest of milk
-
-place on medium heat, slowly bring to a boil while stirring about every 2 minutes, should take ~15 minutes
-
-reduce to simmer, continue stirring until tapioca pearls are plump, translucent, and taste done, ~20 minutes

-stir in vanilla extract (if using)

-remove and allow to cool
-
-serve warm (sprinkle with nutmeg if desired)
