Ingredients

  • 3 cups milk
  • 1/3 cup small pearl tapioca
  • 2 extra-large egg yolks, lightly beaten
  • 1/4 teaspoon salt
  • 1/3 cup sugar
  • 1 tsp vanilla extract, if not using vanilla bean
  • 1 vanilla bean, split along the length w/ scraped out innards

Directions

  1. -soak 1/3 cup tapioca pearls in 3/4 cup milk in thick bottomed medium sized pot for 30 minutes

  2. -whisk eggs, salt, sugar, vanilla bean and innards (if using), rest of milk

  3. -place on medium heat, slowly bring to a boil while stirring about every 2 minutes, should take ~15 minutes

  4. -reduce to simmer, continue stirring until tapioca pearls are plump, translucent, and taste done, ~20 minutes

  5. -stir in vanilla extract (if using)

  6. -remove and allow to cool

  7. -serve warm (sprinkle with nutmeg if desired)
