Pineapple Fried Rice

Serves 6 people

Ingredients

  • 1 c jasmine rice
  • 20 ozs pineapple tidbits
  • 3 green onions
  • 1 large red chili, finely chopped
  • 3 sprigs cilantro, chopped
  • 3 T oil
  • 2 c fresh shrimp, cleaned and deveined
  • 2 cloves garlic, minced
  • 2 T fish sauce (optional, use less or none to taste)
  • 2 T soy sauce
  • 1 t sugar

Directions

  1. Prep rice per package

  2. In a bowl, combine pineapple, onions, chili, and cilantro. Set aside

  3. Heat 1 T oil in skillet, saute shrimp til done

  4. Remove shrimp, add remaining oil

  5. Saute garlic until golden brown

  6. Add rice and stir

  7. Add fish sauce and soy sauce and sugar

  8. Stir and heat thoroughly

  9. Fold in pineapple mixture and shrimp and heat through
