Ingredients
- 1 c jasmine rice
- 20 ozs pineapple tidbits
- 3 green onions
- 1 large red chili, finely chopped
- 3 sprigs cilantro, chopped
- 3 T oil
- 2 c fresh shrimp, cleaned and deveined
- 2 cloves garlic, minced
- 2 T fish sauce (optional, use less or none to taste)
- 2 T soy sauce
- 1 t sugar
Directions

Prep rice per package

In a bowl, combine pineapple, onions, chili, and cilantro. Set aside

Heat 1 T oil in skillet, saute shrimp til done

Remove shrimp, add remaining oil

Saute garlic until golden brown

Add rice and stir
-
Add fish sauce and soy sauce and sugar

Stir and heat thoroughly

Fold in pineapple mixture and shrimp and heat through
