White Clam Sauce for Pasta

Ingredients

  • 4 tbsp. olive oil
  • 4 tbsp. butter
  • 3 cloves garlic, minced
  • 1 tbsp flour
  • 1 1/2 cups water
  • 1 envelope St Ours clam broth
  • 1/3 cup chopped fresh parsley
  • 1/2 tsp. dried basil or 1 tbsp fresh basil
  • 2 cups chopped clams (fresh, frozen or canned)
  • grated parmesan

Directions

  1. Melt butter with olive oil, add garlic and salute one minute. Add flour and cook another minute while stirring. Mix in water and clam broth and basil. Bring to a boil. Add clams and parsley and simmer 5 minutes. Serve over hot pasta with cheese on the side
