Alice’s Restaurant Tomato Soup

Ingredients

  • 1 medium size onion, finely chopped (1/2 cup)
  • 1/2 stick butter
  • 2 (29 oz) can tomato puree
  • 2 1/2 cups water
  • 1 package (10 oz) extra sharp shredded Cheddar cheese
  • 1/2 tsp salt
  • 1 cup sour cream

Directions

  1. Saute the onion in butter in large saucepan until soft. Stir in tomato puree, water, cheese and salt. Heat, stirring constantly until cheese melts but do not allow to boil.

  2. Remove from heat. Let cool 10 minutes. Stir one cup of warm soup into sour cream in small bowl. Gradually stir back into remaining soup.

  3. Serve warm. Makes 2 quarts.
