Ingredients
- 1 lb fresh or frozen spinach tortellini, cooked
- 1 lb fresh or frozen egg tortellini, cooked
- 1 head broccoli-broken into florets and tender skins sliced
- 1 lb carrots, peeled, sliced 1/4"
- 2-3 leeks, cut into thin julienne slices
- 1/2 cup chopped fresh basil
- Dressing:
- 1 egg yok
- 2 tbsp lemon juice
- 1 tbsp dijon mustard
- 1 tbsp balsamic vinegar
- 1 cup vegetable oil
- 1/2 cup olive oil
- 1 tsp. dried thyme
- finely grated zest of 1 orange
- salt and pepper to taste

Combine salad makings and dressing and mix dressing in salad.
