Ingredients
- 1 1/2 pounds potatoes, cut into 1 1/2 inch chunks
- 6 unreeled garlic cloves
- 3 tbsp. evoo
- 1 cinnamon stick, broken into pieces
- 1 tsp kosher salt
- 1/2 tsp ground black pepper
Directions

at oven to 325. Put all ingredients in a 10" cast iron skillet and stir until combined. Transfer to the oven and roast, stirring once or twice, until potatoes are tender about 1 hour and 15 minutes. Then raise the oven temperature to 450 and cook until potatoes are crusty, brown and tender, about 15 minutes longer.
