Ingredients
- 3/4 cups Flour Blend (see my previous post for recipe)
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 1/2 cup unsweetened applesauce
- 1/4 cup plain yogurt (We actually used vanilla because that's what I had!)
- 1 teaspoon vanilla extract
- 2 tablespoons milk
- 1 large egg
- 2 tablespoons honey
- 1/4 cup chocolate chips
- 1/4 cup ground almonds
Directions

Mix together flour blend, baking powder, almonds and salt.

In another bowl, whisk together applesauce, yogurt, vanilla, milk, egg, and honey.

Add wet ingredients to the dry ones until just blended. (You may need to add more milk if you’re mix is too thick – I added another tablespoon to mine)

Add the chocolate chips and mix lightly.

Spray a large skillet over medium heat. Test to make sure it’s hot enough with a few drops of water.

This recipe works best with “silver dollar” size pancakes. Drop tablespoons of batter into the skillet. When bubbles begin to set around the edges of the pancake, gently flip them over. Cook another 2-3 minutes on the other side.
