Oyster Stew

Ingredients

  • 2 shallots, thinly sliced
  • 1 cup dry white wine
  • 2 bay leaves
  • 2 cups creme fraiche
  • 1 tbsp. chinese mustard, dry (rehydrated)
  • 2 doz. island creek oysters, shuck, save liquor
  • 1/4 cup chives, for garnish
  • fresh cracked pepper
  • toast points

Directions

  1. In a sauce pan add shallots, wine & bay leaves. Simmer until reduced. Add creme fraiche & mustard & whisk smooth, heat the creme fraiche through. Add oysters & liquor, poach for one minute, turn off stove, let oysters continue to poach. Remove bay leaves. Garnish with black pepper & chives. Serve with toast points.
