Oyster Stew

Ingredients
- 2 shallots, thinly sliced
- 1 cup dry white wine
- 2 bay leaves
- 2 cups creme fraiche
- 1 tbsp. chinese mustard, dry (rehydrated)
- 2 doz. island creek oysters, shuck, save liquor
- 1/4 cup chives, for garnish
- fresh cracked pepper
- toast points
Directions

In a sauce pan add shallots, wine & bay leaves. Simmer until reduced. Add creme fraiche & mustard & whisk smooth, heat the creme fraiche through. Add oysters & liquor, poach for one minute, turn off stove, let oysters continue to poach. Remove bay leaves. Garnish with black pepper & chives. Serve with toast points.
