Fresh Apple Pound Cake

Ingredients
- 1 cup vegetable oil
- 1 1/2 cups sugar
- 3 eggs
- 1 teaspoon vanilla extract
- 3 cups unbleached all-purpose flour
- 1 teaspoon ground cinnamon
- 1/2 teaspoon salt
- 1 teaspoon baking soda
- 2 cups apples , peeled and chopped (1-2 large, whole)
- 2 cups pecans , chopped
Directions

Preheat oven to 350°; grease and flour a 10-inch tube pan.

In a bowl, combine the oil and sugar.

Beat in the eggs, one at a time, mixing well after each addition; stir in vanilla.

In another bowl, combine the flour, cinnamon, salt, and baking soda.

Stir the flour mixture into the egg mixture.

Fold in the apples and nuts; pour the batter into the prepared pan.

Bake for 1 1/2 hours, or until a pick comes out clean.

Let cake cool in pan for 10 minutes before transferring it to a serving plate.

May drizzle the warm cake with caramel sauce before serving.
