Ingredients
- 2 1/4 cups all-purpose flour
- 1 1/2 teaspoons baking powder
- 1 teaspoon baking soda
- 1 teaspoon ground cinnamon
- 1/4 teaspoon ground ginger
- 1/2 teaspoon salt
- 1/4 teaspoon ground nutmeg
- 4 extra large eggs, at room temperature
- 1 1/2 cups sugar
- 1 cup canola oil
- 1/2 cup buttermilk
- 2/3 cups firmly packed brown sugar
- 2 teaspoons pure vanilla extract
- 1/2 cup crushed pineapple, drained
- 1 pound finely grated carrots
- 1 cup toasted chopped pecans
- 1 cup golden raisins

Mix everything together and pour into large rectangular cake pan or two smaller round pans.

Bake at 350 degrees for 30-40 minutes
