Deviled Eggs

Crowd-pleaser. Very simple recipe. Dad loves these. All quantities are eye-balled.

Ingredients

  • Eggs, hard-boiled (size large preferred), peeled and halves (fresher eggs are harder to peel)
  • Mayonnaise
  • Yellow mustard
  • Salt
  • Pepper
  • Paprika
  • Garlic powder, optional
  • Onion powder, optional

Directions

  1. Boil eggs. (Place eggs in shallow water, until just covered. On medium heat, bring to gentle boil, then turn off heat and cover for 10 minutes. Place under running cold water.) Peel eggs.

  2. Halve the eggs lengthwise, removing the yolks and placing into a separate bowl. Mash the yolks until smooth.

  3. Add mayonnaise, mustard, salt, pepper, and either garlic or onion powder (optional) to egg yolks and mix well. (Using a ricer helps gets a good consistency for the yolks.) Mixture should be creamy, but not runny. Remove all lumps from yolks.

  4. Using either a teaspoon, or for fancier presentation, decorator tip and bag, fill up each egg white half with yolk mixture.

  5. Sprinkle each with paprika. Keep cool.
