Cranberry Orange Nut Bread

Dave’s favorite for Christmas morning.

Serves 8 people

Ingredients

  • 4 cups flour
  • 1 1/2 cups sugar
  • 1 Tablespoon baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 2 eggs, beaten
  • 1 1/2 cups orange juice
  • 1/2 cup vegetable oil
  • 2 cups cranberries, halved (fresh is preferred, frozen is fine)
  • 1 cup chopped nuts (pecans or walnuts)
  • 2 teaspoons zest of orange peel

Directions

  1. Preheat oven to 375° F. Grease and lightly flour 2 loaf pans.

  2. Blend dry ingredients in bowl. Set aside.

  3. Combine in separate bowl eggs, juice, and oil.

  4. Add to dry ingredients, stirring until just moistened.

  5. Stir in cranberries, nuts, and orange peel.

  6. Pour into 2 greased and lightly floured loaf pans.

  7. Bake at 375° F. for 55-60 minutes or until toothpick in center comes out clean.
