Flank steak with bok choy

Good as marinade with or without bok choy

Serves 4 people

Ingredients

  • 1 1/2 lb flank steak at least 3/4 inch think
  • 3 garlic cloves, minced
  • 2 tbsp finely grated fresh ginger
  • 1/4 cup soy or teriyaki sauce
  • 2 tbsp brown sugar
  • 2 tbsp balsamic vinegar
  • 2 tbsp dark sesame oil
  • 4 baby bok choy, sliced into quarters
  • 2 tbsp sesame seeds

Directions

  1. Bring steak to room temperature

  2. Prepare garlic and ginger and place in small bowl. Stir in soy, sugar, vinegar and oil

  3. Pour half of mixture into small bowl and set aside for drizzling over the cooked steak

  4. Place oven rack in top third of oven. Preheat broiler. Line a rimmed baking sheet with foil.

  5. Score steak on both sides in a diamond pattern, about 1/4 inch deep. Place meat on a rack set on foil. Brush half of remaining sauce over steak.

  6. Broil 5 minuts, turn steak and brush with remaining sauce

  7. Continue broiling until it resists slightly when pressed, 4-5 min for medium rare.

  8. Let stand 5 minutes before slicing.

  9. While things broil… slice bok choy and rinse under cold running water to remove grit.

  10. Lightly oil a frying pan and set over medium-high heat.

  11. Stir fry until it starts to wild, 3 minutes. Sprinkle with a pinch of salt.

  12. Remove to a platter and top with sesame seeds.

  13. Thinly slice steak and lay beside bok choy.

  14. Drizzle set aside sauce over everything.
