Petite Cheese Cakes

Very easy and perfect individual servings for party food.

Ingredients
- 2 8-ounce packages cream cheese
- 3/4 cup sugar
- 1 Tablespoon lemon juice
- 1 teaspoon vanilla
- 2 eggs
- Vanilla wafers
Directions

Beat ingredients except vanilla wafers until fluffy.

Line 24 muffin tines with cup cake liners. Add 1 vanilla wafer in the bottom of each cup.

Fill 2/3 full. Bake at 375° F. until set, 15 to 20 minutes.

Add canned pie fruit of choice and dab of whipped cream on top.
