Petite Cheese Cakes

Very easy and perfect individual servings for party food.

Ingredients

  • 2 8-ounce packages cream cheese
  • 3/4 cup sugar
  • 1 Tablespoon lemon juice
  • 1 teaspoon vanilla
  • 2 eggs
  • Vanilla wafers

Directions

  1. Beat ingredients except vanilla wafers until fluffy.

  2. Line 24 muffin tines with cup cake liners. Add 1 vanilla wafer in the bottom of each cup.

  3. Fill 2/3 full. Bake at 375° F. until set, 15 to 20 minutes.

  4. Add canned pie fruit of choice and dab of whipped cream on top.
