Rum Balls

These were always part of the Gregory Christmas cookies. Make ahead of time and keep in a sealed container. This recipe card has two measurements, the second one is the halved measurements.

Prep time: 50 minutes

Ingredients

  • 2 cups (1 cup) crushed fine vanilla wafers
  • 2 cups (1 cup) sifted confectioners sugar
  • 2 cups (1 cup) chopped pecans
  • 4 Tablespoons (2 Tablespoons) cocoa
  • 4 Tablespoons (2 Tablespoons) light corn syrup
  • 1/2 cup (1/4 cup) rum

Directions

  1. Combine vanilla wafers, sugar, and cocoa. Add corn syrup and rum.
  2. Roll in 1” balls. Roll ½ in chopped nuts and roll the other half in granulated sugar.

  3. Store in tight container. Improves with age.
