Lime Chocolate Fascination

Ingredients

  • 1 (14 1/2 ounces) can evaporated milk
  • 1 (3 ounces) package lime flavor gelatin
  • 2 cups hot water
  • 1 cup sugar
  • 1/4 cup lime juice
  • 2 teaspoons lemon juice
  • 4 drops (approximately) green food coloring (might need more)
  • 2 cups chocolate wafer crumbs (an 8 1/2 ounce package?)
  • 1/2 cup melted butter

Directions

  1. Chill milk at least one day in refrigerator.

  2. Dissolve gelatin in hot water. Chill until mixture is partly congealed (consistency of unbeaten egg whites). Then whip until fluffy. Stir in sugar, lime and lemon juices and food color to tint a delicate green.

  3. Whip milk until light and fluffy; fold into gelatin mixture.

  4. Combine cookie crumbs and melted butter. Reserve ½ cup crumbs; press remaining crumbs into bottom of a 12×8” pan.

  5. Add whipped gelatin mixture. Sprinkle reserved ½ cup crumbs on top.

  6. Chill overnight or until firm.
