Gobs (Hershey’s Whoopie Pies)

Two cakelike cookies with creamy filling in between. Dave loves these. Gobs is the Pennsylvania name.
Start with the first step of the filling so it can chill while baking the cookies.
Charlotte’s notes: the filling recipe actually makes enough for a double batch of dough.

Ingredients
- 1/2 cup shortening
- 1 egg
- 1 teaspoon vanilla
- 1 3/4 cup unsifted flour
- 1 1/4 teaspoon baking soda
- 1 cup buttermilk or sour milk
- 1/2 cup cocoa
- Cream Filling:
- 10 Tablespoons of flour
- 2 cups milk
- 2 cups powdered sugar
- 1 cup Crisco
- 1 cup margarine
- 1 teaspoon vanilla
Directions

Lightly grease a cookie sheet.

Cream shortening and sugar. Add egg and vanilla; beat well.

Combine flour, cocoa, baking soda, salt in a separate bowl; add alternately with buttermilk to creamed mixture.

Drop by teaspoonfuls 2” apart onto greased cookie sheet.

Bake at 375° F. for 8-10 minutes.

Fill with cream icing filling.

Filling: Cook flour with milk until thick. Put in refrigerator and cool completely.

Cream sugar, Crisco, margarine, vanilla. Beat the creamed ingredients into the cooled flour mixture. Put filling between 2 whoopie pies and eat.
