Cheese Cake

Notes from Grandma: You must be the judge of your oven temps and bake accordingly.
I really like a spring form pan. I grease the sides and pack the crumbs up the side of the pan.

Ingredients
- Crust
- 20 graham crackers
- 1/4 cup sugar
- 1/4 cup melted butter/ oleo
- Filling
- 16 ounces cream cheese
- 3 eggs
- 1/2 cup sugar
- 3/4 teaspoon vanilla
- Topping
- 1 pint sour cream
- 1/4 cup sugar
- 1 teaspoon vanilla
Directions

Crust: Roll graham crackers. Add sugar and butter. Grease pan and place in refrigerator for 10 minutes. (Note from Grandma: “Be sure to grease pan.”)

Filling: Beat cream cheese until smooth while adding other ingredients. Beat 3 or 4 minutes. Pour over crust and bake at 375°F for 20 minutes. Cool 15 minutes.

Topping: Beat sour cream, sugar, and vanilla together. Increase oven temperature to 475° F. Pour mixture over cooled filling. Bake 10 minutes. Cool to room temperature. Store in refrigerator.
