Ingredients
- 1/2 tsp salt
- 1/2 tsp freshly ground pepper
- 1/2 tsp garlic powder
- 1/2 tsp curry powder
- 3 T flour
- 6 boneless, skinless chicken breasts cut into 1 inch cubes
- 1/4 cup butter
- 1/2 pound fresh mushrooms, sliced
- 1/4 cup Amaretto
- 3 T. Fresh lemon juice
- 1 tsp finely grated lemon zest
- 1 T. cornstarch
- 1 1/2 cups chicken broth
- Cooked rice or pasta

In bowl or plastic bag, combine salt, pepper, garlic powder, curry powder, and flour. Add chicken and toss to coat thoroughly. In large skillet, heat butter over med-high heat. Add coated pieces and brown on all sides. Add mushrooms, Amaretto, lemon juice, and lemon zest. Simmer for 5 mins. In a small bowl, combine cornstarch and chicken broth and stir into chicken mixture. Cook over low heat, stirring constantly, until mixture bubbles and thickens. Serve over rice or pasta.
