Bowtie Nicoise Salad

Serves 4 people

Ingredients

  • 1 (12-ounce) package bowtie pasta
  • 1 cup light mayonnaise
  • 4 oz. feta cheese, crumbled
  • 2 cloves garlic, minced
  • 1/2 tsp. black pepper
  • 1/2 cup Parmesan cheese, grated
  • 1 can (6 1/2 oz.) solid white tuna
  • 1/4 cup red bell peppers, diced
  • 2 Tbsp. celery, diced
  • 3/4 cup black olives, halved

Directions

  1. Cook pasta according to package directions.

  2. Rinse with cold water and drain well. (skip the rinse if you prefer to eat it hot….we do)

  3. While pasta is cooking, combined mayonnaise, feta, black pepper and Parmesan to make dressing.

  4. Drain and flake tuna, add bell peppers celery and olives.

  5. Add to dressing and mix.

  6. Add pasta to dressing and mix gently.

  7. Salt and pepper to taste.
