Ingredients
- Chuck roast
- Coarse Salt and pepper
- Olive oil
- 1-2 medium onions
- 3 or 4 garlic cloves
- 4-5 celery stalks, chopped
- Carrots, chopped
- 1/2 cup dry wine
- Beef stock or broth, or chicken stock or broth
Directions
-
Season both sides of a chuck roast with coarse kosher salt and fresh ground pepper.
-
Using 2 Tablespoons olive oil in a cast iron skillet, brown well both sides of meat. Place roast in roasting pan.
-
Meanwhile, sauté onions and whole garlic cloves (3 or 4) in skillet with pan drippings.
-
Deglaze pan with 1/2 cup cooking wine (Or any dry wine — also a can of Budweiser is very nice).
-
Pour vegetables and wine over roast and add carrots and celery.
-
Roast in 325 degree oven for 2/12 to 3 hrs. Or prepare and cook in crock pot for 6-8 hours on high.
-
Beef stock or broth can be added to the meat juices for more gravy at the end (or beginning especially when cooked in crock pot).
