Garlic Chicken Stir Fry With Quinoa, Peppers & Basil

Ingredients
- 1 Cup Quinoa cooked with stock
- 2 Cups Stock (for Quinoa)
- 1 1/2 lbs boneless chicken breasts
- 4 Tbs Olive Oil
- 1 Small Onion, chopped
- 2 Bell peppers, seeded & thinly sliced
- 5 cloves garlic, thinly sliced
- 20 leaves fresh sweet basil, julienned
Directions

Cut chicken into cubes.

Saute chicken until brown, about 5 minutes.

Add onion, peppers and saute for 2 minutes.

Add garlic saute 1-2 minutes.

Remove from heat, add basil and quinoa.

Sprinkle with grated parmesan cheese.
