Potato Salad

Ingredients
- 5 pounds potatoes, peeled and chopped
- 1 teaspoon salt
- 1/2 jar mayonnaise (Miracle Whip is what Darden uses)
- 1 onion, finely chopped
- 3 Tablespoons pickle relish
- 1 Tablespoon mustard
- 3 eggs, hard-boiled, peeled and chopped
- Chopped celery, optional
Directions

Peel, chop, and boil potatoes until fork tender. Drain.

While hot, add each ingredient, mixing well, almost mashing potatoes.
