Chicken Saltimbocca

Ingredients

  • 4 Boneless Chicken Breasts
  • Salt and Pepper
  • 1/2 Pound Prosciutto, Sliced Thin
  • 1/2 Pound Mozzarella cheese, Sliced Thin
  • 2 Eggs, Beaten
  • 1/2 Cup Olive Oil
  • 1 Cup Sherry
  • 1 Pound Mushrooms, Fresh
  • 1 Cup Italian bread crumbs

Directions

  1. Flatten chicken breasts. Season w/ salt & pepper. Place a slice of prosciutto and cheese on each breast. Roll up breast and secure w/ toothpicks. Dip each piece into eggs, then bread crumbs. Cook in oil until lightly browned. Remove Chicken an place in large baking dish or casserole dish. Add sherry and mushrooms to drippings in skillet. Cook for 15 seconds and then pour over chicken. Cover. Bake for 2 hours at 200 degrees. Use extra cheese place over chicken when about done.
