Ingredients
- 1 lb. Navy Beans
- 1/2 lb. Bacon
- 8 C. Water
- 2 tbsp. parsley
- 1 tsp. salt
- 1/4 tsp. pepper
- 1 C. finely chopped celery
- 1 onion finely chopped
- 1 lg. carrot finely chopped
- 1 bay leaf (to remove later)
Directions

Heat beans in 8 C. water. Boil gently 2 minutes. Turn off and let set 1 hour. Put in Crock Pot and add remaining ingredients. Cover and cook 12 to 14 hrs on low. Remove bay leaf before serving.
