Herb roasted Potatoes

Cook time: 30 minutes
Serves 6 people

Ingredients

  • 2 tbs butter or margerine
  • 1 tbs chopped fresh parsley leaves
  • 1/2 tsp freshly grated lemon peel
  • 1/2 tsp slat
  • 1/8 tsp black pepper
  • 1 1/2 pds of small red potatoes, cut in half

Directions

  1. preheat over to 450. In 3 quart saucepan, melt butter with parlsey, lemon peel, salt, and pepper over miedium-low heat. Remove saucepan from heat; add potatoes and toss well to coat.

  2. Place potato mixture in center of 24" by 18" sheet of heavy-duty foil. Fold edges over and pinch to seal tightly.

  3. Place package in jelly-roll pan and bake until potatoes are tneder when pierced with knife (through foil) about 30min
