Herb roasted Potatoes

Potatoes,
Prep time: 15 minutes
Cook time: 30 minutes
Serves 6 people
Ingredients
- 2 tbs butter or margerine
- 1 tbs chopped fresh parsley leaves
- 1/2 tsp freshly grated lemon peel
- 1/2 tsp slat
- 1/8 tsp black pepper
- 1 1/2 pds of small red potatoes, cut in half
Directions

preheat over to 450. In 3 quart saucepan, melt butter with parlsey, lemon peel, salt, and pepper over miedium-low heat. Remove saucepan from heat; add potatoes and toss well to coat.

Place potato mixture in center of 24" by 18" sheet of heavy-duty foil. Fold edges over and pinch to seal tightly.

Place package in jelly-roll pan and bake until potatoes are tneder when pierced with knife (through foil) about 30min
